Energy bars (without cooking)

For 15 bars

120g of almond paste

55g of coconut oil

2 tablespoons of agave syrup (you can also use honey or maple syrup)

45g of puffed quinoa

35g of chocolate chips

60g of hazelnuts

2 tablespoons of grated coconut

10 dates

3 tablespoons of chia or flax seeds (optional)

Gently melt the coco oil into a small saucepan with the almond paste, blending them to make a liquid paste

In a bowl, mix the dry ingredients

Pour the mixture of coco oil and almond paste into the bowl of dry ingredients, then add the agave syrup and stir the blend until everything turns into a compact paste

Spread the mixture onto a baking tray lined with greaseproof paper, to a depth of about two cm.

Cover with plastic film and place it in the refrigerator for at least one hour so the mixture can solidify

Cut the bars with a knife, enjoy them straight from the fridge (especially in summer as heat can soften them) and store them in a refrigerated covered container (can be kept for approximately 10 days)
